So I have notice that a lot of people are looking for a healthier style of chili these days so here is my version of a white bean chicken chili recipe that I found. I had this last weekend and found it to be a great addition to my chili recipe list. So if you where looking for a white bean chicken chili recipe here you go.
INGREDIENTS (Nutrition)
1 pound diced, cooked chicken brest
1 onion, diced
2 cloves roasted garlic, mashed
16 ounces chicken broth
20 ounces tomatillos, drained and chopped
16 ounces diced tomatoes
7 ounce can diced green Chiles
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/4 teaspoon ground cumin
15 ounces white beans
2 ears fresh corn
1 lime, sliced
INSTRUCTIONS
Add Onions, garlic, broth, tomatillos, tomatoes, and spices to your chili pot.
Bring it all to a boil, then reduce to a simmer for about 10 minutes.
Throw in the white bean, chicken, chili es and corn, and let it simmer for another 5 minutes. Salt and pepper to taste, and top with your favorite toping. For me I am going to add some sour cream.
Now this white bean chicken chili will server about 8 normal people.
